Gajar ka halva

Ingredients:

6 md Carrots;scraped/coarsely grated
1 qt Milk
1 c Light cream
1 c Jaggery (raw cane sugar)*
1/2 c Sugar
1 1/2 c Almonds, blanched;pulverized
1/4 c Ghee
1/2 ts Cardamom (elaichi)seeds; crushed
1/4 c Pistachios; toasted/unsalted
1/4 c Almonds; unsalted/slivered/
-blanched/toasted

Method:

* Substitute 1 cup dark-brown sugar combined with 1 tb dark molasses.
1-In a deep heavy 5- to 6-quart saucepan, combine the carrots, milk and cream. Stirring constantly, bring to a boil over high heat.
2-Reduce the heat to moderate and, stirring occasionally, cook for 1 hour, or until the mixture has reduced to about half its original volume and is thick enough to coat a spoon heavily.
3-Stir in the jaggery/gannay ki brown shakar and the sugar, and continue cooking for 10 minutes. Reduce the heat to the lowest possible point, add the pulverized almonds and the ghee, and stir for 10 minutes more, or until the halva mixture is thick enough to draw away from the sides and bottom of the pan in a solid mass.
4-Remove the pan from the heat and stir in the cardamom.
5-With a metal spatula, spread the halva on a large heatproof platter, mound it slightly in the center, and decorate the top with pistachios and slivered almonds. Serve warm or at room temperature. Gajar ka halva is also sometimes decorated with a special edible silver leaf. Tastes great at iftar and is rich in calories.[/color]

Lab-e-Sheerain

Cooking time: As Required
Serves: 4-6

Ingredients :


1 liter milk
3tsp cornflour
3tsp sugar
dry fruits 1 cup
condense milk 1 cup
rosewater 1tsp
pinniapple1 cup
banana 1cup
cream 1cup

Method:
1-First take a pan and put milk, cornflour and cream boil them properly and cool it.
2-Now add all Ingredients. Its ready to serve.

Muffins

Ingredients:
Butter 75gms,
castor sugar 75 gms,
Maida 75gms,
baking powder 1/3 tsp,
vanilla essence 1tsp,
eggs 5,
a pinch of food color,
cooking chocolate 150 gms,
castor sugar 4 tblsp, milk 3-4 tblsp

Method:

In a bowl, take maida, castor sugar and baking powder and mix it well. Now add 5 eggs one by one and beat them continuously. Add butter, vanilla essence and food color and beat them well. Now take a baking pan, greece it with oil and add the mixture in it. Bake in a pre-heated oven on 200 degree for 20 minutes.

Chocolate sauce: In a pan, take 50 gms butter, add 3-4 tblsp milk and cooking chocolate and heat it till the chocolate melts. Now add 3 tblsp castor sugar and again 3-4 tblsp milk in it and mix it well. The chocolate sauce is ready.

In the end, dip the muffins in chocolate sauce (optional) and take them out for presentation.

khopra 250gms
sugar 1 1/2 cup (derh pyaali)
malai or cream 1 cup
eggs 3
small cardimom 2-3 (only seeds)
cloves 3-4
ghee 1 pao
green food colour few drops
cardimom powder


Method :
sab se pehle ghee men alaichi , long , alaichi powder ko daal k garam karen n jab wo karakne lage to khopra daaldenn zara sa bhoonne k baad us men sugar shamil kardenn n mix karen achay se phir add cream n bhoonen then alag se eggs n food colour ko saaath phent kar burner band kar k thora thora kar k anda shamil karen n then again put it on fire on slow flame n bhoon kar dish out karlen n decorate wid almonds .
